Our Love for Food
Taste is a science.
Our interest in food caused an explosion in research on taste. Thus, it turns out how complex the sense of taste actually is. So much more complicated than sight, according to Robert Margolskee, director of the Monell Center. In recent years, scientists have made great advances in taste receptors and genes coding for these receptors. However, they are still far from fully understanding the sensory setup that reveals our dining experience. Margolskee describes this setup as “a Neural Nervous machine where a small ball rolls and triggers something, it also activates something else, as a result, a signal that goes through six different stages reaches the brain and consequently swallows or spits what you have in your mouth.”
